In the pristine Woodinville distillery, the grains undergo a transformation. They're mashed, distilled, and then make a voyage over the Cascade Mountains to private barrel houses. It's here, amidst Central Washington's relentless seasonal dance, that the spirit truly matures. The oak barrels, seasoned for eighteen months under nature's watchful eye—rain, wind, sun, and snow—imbibe the spirit with nuanced flavors, tempered tannins, and an unparalleled depth.
But the tale doesn't end here. The matured bourbon is then graced with the allure of Ginjinha Barrels. Drawing from Portugal's rich heritage, these barrels have cradled Ginjinha, a cherished liquor infused with the tang of Ginja Berries. The resulting spirit is a symphony: notes of blackberry jam on the nose, a palate bathed in honeyed sweetness and dark cherry, culminating in a crescendo of cinnamon, cardamom, and clove spice.
