Process & Profile
Cardrona Single Malt Whisky Growing Wings is a five-year-old New Zealand single malt produced in the Cardrona Valley. It is made with malted barley grown on New Zealand’s South Island and pristine mountain water before undergoing a fermentation of more than 70 hours.
The whisky is double-distilled in hand-hammered Forsyth copper pot stills and matured in a combination of select ex-Oloroso sherry butts and ex-bourbon barrels. These casks are brought together to create a rich balance of dried fruit, vanilla, treacle, toasted nuts, malt, and oak.
Growing Wings is bottled at its natural cask strength of 127.8 proof. It is non-chill filtered and presented with natural color, preserving the whisky’s concentrated flavor and full texture.
Tasting Notes
Nose: Vanilla bean, treacle, toasted pecans, sweet malt, and gentle oak
Palate: Pecan pie, vanilla bean cream, dark toffee, dried fruit, toasted nuts, and warming cask spice
Finish: Long and rich with lingering vanilla, treacle, roasted pecan, sherry spice, and dry oak
What Makes It Special
Cardrona Growing Wings celebrates five years of maturation in oak and represents an important stage in the development of Cardrona’s New Zealand single malt.
The marriage of ex-Oloroso sherry butts and ex-bourbon barrels creates a layered profile. The sherry casks contribute dried fruit, toasted nuts, and spice, while the bourbon barrels add vanilla, caramel, and gentle oak sweetness.
Bottling the whisky at natural cask strength preserves its intensity and allows drinkers to adjust the pour with water according to preference. Its non-chill-filtered presentation also retains the natural oils that contribute to its rich mouthfeel.
How to Enjoy
Enjoy Cardrona Growing Wings neat in a tulip-shaped whisky glass to experience its concentrated vanilla, treacle, pecan, malt, and oak character. Allowing the whisky to rest for several minutes can help its aromas develop.
Because it is bottled at 127.8 proof, a few drops of water can soften the alcohol and reveal additional vanilla cream, toasted nut, dried-fruit, and sherry-spice notes. It can also be served over one large ice cube for a gradually softer pour.
