Production Process:
- Roasting: Agave piñas are carefully roasted for 72 hours in small 12-16 ton brick ovens, a method that ensures the agave's natural sugars are perfectly caramelized.
- Extraction: The cooked agave is then processed using both a traditional stone tahona and a roller mill, a combination that extracts the maximum flavor and sweetness from the agave fibers.
- Fermentation: Fermentation is carried out naturally, with agave fibers present, allowing for a fuller, more complex flavor profile.
- Distillation: The tequila undergoes two rounds of distillation in small stainless steel and copper pot stills, refining its purity and enhancing its crisp, clean profile.
