Production Process:
- Roasting: The agave piñas are roasted for 72 hours in small 12-16 ton brick ovens, a traditional method that allows for a slow, even caramelization of the agave's natural sugars.
- Extraction: Utilizing a traditional stone tahona and roller mill, the roasted agave is crushed, extracting the rich, sweet juice while retaining the fibrous agave fibers, which contribute to the complexity of the fermentation.
- Fermentation: The fermentation process is natural, with agave fibers present, fostering a full-bodied and richly flavored mosto ready for distillation.
- Distillation: Distilled twice to proof in small stainless steel and copper pot stills, this method ensures the tequila maintains its intense agave character, with no water added post-distillation to dilute its strength or purity.
