Cazcanes No. 9 Tequila Blanco is a high-proof expression produced from fully mature, certified organic Blue Weber agave harvested in the valleys of Jalisco. The agave is slowly cooked in a low-pressure autoclave through a 24-hour cycle before its juice is extracted with a four-pass roller mill.
Mineral-rich volcanic spring water from Navichi Springs is used throughout production, followed by fermentation in stainless steel vats with proprietary yeast. The tequila is double distilled in stainless steel pot stills with copper coils, aerated, and rested in stainless steel for one to three months before bottling at 100 proof, creating a richer mouthfeel and more concentrated agave character.
