Production begins with estate-grown and locally sourced grains, including rice, with fermentation initiated using white koji. An initial seven-day fermentation takes place in clay pots, followed by another fourteen days in stainless steel before distillation in stainless steel pot stills.
The spirit is then matured for a full 10 years in ex-brandy casks.
