Caballito Cerrero Azul Reposado 46: CABALLITO CERRERO, a distillery with a deep respect for traditional agave processing. Made from the finest Tequilana FA.C. Weber Agave, cultivated in the high-altitude Agave Fields of San Jose (900 masl), this reposado offers a unique and nuanced taste. The agave is cooked in a brick steam oven and processed through a double pass mill, ensuring the purity and essence of the agave is captured. The fermentation process utilizes both wild and proprietary yeast strains, along with natural spring water, adding depth and character to the spirit. Distilled in a combination of stainless and copper stills, the reposado is then aged ('vacationed') in American Whiskey barrels, imparting subtle notes of oak and vanilla. This aging process in open stainless steel vats allows the spirit to develop a complex, yet smooth profile.
