Dixeebe Mezcal Pechuga 04

Artisanal Pechuga Mezcal | 50.1% ABV | 100.2 Proof | 375mL | Espadín | Edition 04 | 1,283 Bottles

Process & Profile

Dixeebe Mezcal Pechuga 04 is a small-production Pechuga expression made by Maestro Palenquero Don Valentín Cortés at Guardianes del Mezcal in Santiago Matatlán, Oaxaca. Edition 04 is produced from Espadín, scientifically classified as Agave angustifolia, harvested at approximately eight years of maturity.

The agave was harvested in October 2023 and cooked in a traditional underground conical oven before being crushed by tahona. Natural fermentation takes place in pinewood vats, followed by double distillation in a copper still.

For this Pechuga release, Dixeebe incorporates natural fruits into the production, building additional fruit, floral, herbal, mineral, and spice character around the roasted Espadín base.

Bottled at a robust 50.1% ABV, Edition 04 retains the intensity and texture of traditional artisanal mezcal. Only 1,283 bottles were produced from lot DVCES1023-P, and the expression is presented in Dixeebe's compact 375mL format.

Tasting Notes

Nose: Expressive fruit, fresh herbs, floral aromas, roasted agave, and subtle mineral notes

Palate: Layered fruit and herbaceous character with earthy agave, florals, minerals, and warming spice

Finish: Long and evolving with lingering fruit, herbs, mineral character, and savory spice

What Makes It Special

Dixeebe Pechuga 04 is rooted in a style traditionally associated with celebration and important moments in Oaxacan mezcal culture. Dixeebe describes its Pechuga as more than a production technique, viewing it as an offering connected to gratitude and the celebrations that mark the cycles of life in Santiago Matatlán.

Edition 04 is especially distinctive because of its transparent batch information. Dixeebe identifies the maestro, village, palenque, agave species and age, harvest period, fermentation vessels, still type, lot number, alcohol strength, and exact production quantity.

Traditional production remains central throughout the process: eight-year-old Espadín is cooked underground, tahona crushed, naturally fermented in pine vats, and double distilled in copper.

With just 1,283 bottles produced, the 375mL Edition 04 is a limited opportunity to explore Don Valentín Cortés' interpretation of Pechuga and the multigenerational mezcal tradition of the Cortés family.

How to Enjoy

Enjoy Dixeebe Pechuga 04 neat at room temperature in a copita or small mezcal glass. Sip slowly rather than shooting it, allowing the spirit's fruit, floral, herbal, mineral, and spice characteristics to develop between pours.

At 100.2 proof, a small amount goes a long way. Allowing the mezcal to rest for several minutes after pouring can help its aromatics open and reveal different layers as it sits.

Its limited production and ceremonial Pechuga style make Edition 04 especially well suited to sharing during celebrations, special meals, or focused agave-spirit tastings.
