The mighty Garryana oak, native to the Pacific Northwest from northern California to southern British Columbia, is the source of the unique casks used in maturing Doc Swinson's Exploratory Cask Garryana Oak Finish Bourbon. This wood, which is tricky to cooper and shares structural similarities with French oak but bears richer, darker traits of American white oak, is rarely employed in spirit maturation. The Garryana casks transform the standard caramel and cinnamon notes typically found in bourbon into deeper tones of molasses and clove, underscored by a hint of Kansas City BBQ caramelized on the grill.
