The bourbon begins with Garrison Brothers' sweet mash bill of 74% food-grade white corn, 15% red winter wheat, and 11% malted barley. The use of wheat rather than rye helps build the rich sweetness that supports Cowboy Bourbon's exceptionally high proof.

During maturation, Donnis Todd identifies standout barrels based on aroma, flavor, color, and overall development.
