High N' Wicked Kentucky Straight Bourbon Whiskey, crafted from 51% Corn, 39% Rye, and 10% Malted Barley, undergoes a Sweet Mash fermentation process rather than the typical Sour Mash. Sweet Mash, though requiring more meticulous care and sanitization, results in distinctive sweet, buttery notes and greater flavor variety. We label our Bourbon as "High-Rye" due to its 39% Rye content, which contributes to its unique balance of spice and sweet flavors, along with a notable fruit character.
The grains are added sequentially into the mash, with Corn first, then Rye, and finally Malted Barley. We distill through a Vendome copper column still and doubler, then age for a minimum of 5 years in #4 Char American White Oak Barrels, sourced from Missouri's Independent Stave Company. This whole process, including blending and bottling, happens entirely in Kentucky.
Proofed to 52% ABV (104 proof) via thorough blind tastings, the final product is bottled without chill filtration or additives to maintain optimum flavor, aroma, color, and texture. A cask strength version is occasionally available in limited quantities.
