Papalote forms the foundation of the ensamble, while Espadín and Tobalá add complementary layers of fruit, herbs, acidity, and complexity.
Produced at Palenque del Tentzo in San Nicolás Huajuapan, Puebla, the agaves are cooked in a conical brick pit oven fueled with encino and tepeguaje wood, mechanically milled, and naturally fermented in open pine vats without added yeast or nutrients. The spirit is then distilled in copper stills heated directly by firewood, creating a mezcal with vibrant cooked-agave character, smoke, citrus, spice, and savory depth.
